abstract | The present invention provides a microorganism having a deoxypolyol dehydrogenase production capacity. Solution: Enterobacter sp. Which is a microorganism in the genus Enterobacter having the deoxypolyol dehydrogenase-producing ability having the same structure as the ribitol or L-iditol at the C2 and C3 positions. IK7 (Accession No. NITE BP-271). A culture or deoxypolyol containing deoxypolyol dehydrogenase obtained by culturing the microorganism of the present invention in a deoxypolyol-containing solution having the same structure as ribitol or L-iditol at positions C2 and C3. A method for producing deoxyketose, characterized in that a dehydrogenase is activated to produce a corresponding deoxyketose by oxidation of the deoxypolyol, and the same is collected. The deoxypolyol is 1-deoxy-D-allitol and the corresponding deoxyketos is 1-deoxy-L-psicos. Alternatively, the deoxypolyol is L-ramnitol and the corresponding deoxyketose is 1-deoxy-L-fructose. |
