The present invention provides a protein having an enzymatic activity for converting β-carotene to zeaxanthin or canthaxanthin to astaxanthin, nucleic acids encoding such proteins, nucleic acid constructs containing such nucleic acids, and genetic modifications compared to wild type nucleic acids. The present invention relates to genetically modified organisms which cause or increase the gene expression of, and methods for preparing xanthophyll derivatives. |
