abstract | The present invention relates to a non-metallic isomerase and a method for isomerizing sugars using the same, and it has been confirmed that the isomerase having two subunits can convert aldose and ketose, and exhibits at least 75% activity in the presence of a metal chelator. It is a nonmetallic isomerase. The present invention relates to an amino acid sequence of the isomerase, a gene sequence encoding the same, a recombinant vector containing these genes and a host cell transformed with the recombinant vector and a method for producing isomerase using the same. The present invention also provides a method for isomerization using the isomerization enzyme and a method for producing aldose and ketose using the isomerization method. |
