The present invention relates to a food property improving agent comprising 0.5 to 5 mass% of a total of at least one organic acid selected from acetic acid, fumaric acid and succinic acid, and 0.5 to 15 mass% of dextran. INDUSTRIAL APPLICABILITY According to the present invention, it is possible to provide a food property improving agent capable of improving the moistness of food, particularly bread, difficulty in producing core in the mouth, difficulty in sticking, and improved food. |
