abstract |
[PROBLEMS] To provide a method for producing highly stable epimerase and ketose usable in the food industry. Means for Solving the Problems: Ketose 3-epimerase which can be obtained from a microorganism belonging to the genus Arthrobacter and has an amino acid sequence shown in SEQ ID NO: 1 and the following substrate specificity: (1) D- or L -Ethomerizes the position 3 of the ketose to produce the corresponding D- or L-ketose. (2) Among D- or L-ketose, the substrate specificity for D-fructose and D-psicose is the highest. And ketoose 3-epimerase which generates the corresponding D- or L-ketose by epimerizing the 3-position of D- or L-ketose represented by SEQ ID NO: 3 or SEQ ID NO: 4 in the sequence listing. |
