abstract The present invention already relates to a process for producing alginic acid propylene glycol esters containing fucoxanthin and fucoidan with reduced off-flavor. More specifically, in extracting fucoxanthin and fucoidan with reduced off-flavor from brown algae containing seaweed, kelp, and shellfish, the fat-soluble pigment fucoxanthin and fucoidan, a water-soluble acidic polysaccharide, can be emulsified and kept in a stable state. This is for extracting by converting to alginate propylene glycol ester form, and converting fucoxanthin and fucoidan from brown algae to propylene glycol ester when extracting fucoxanthin and fucoidan without using organic solvents or performing stepwise solvent fractionation. Fucoxanthin, which is easy to be added and preserved without using additional emulsifiers and preservatives when it is added during the product manufacturing process, as it is accompanied by the increase, emulsification stability and preservative properties of propylene glycol alginate.
