Lactase enzyme preparations yielding a clean taste |
abstract |
Disclosed is a process to produce a dairy product which is free of off-flavours produced by aryl-sulfatase activity. The process comprises adding a preparation of a neutral lactase from Kluveromyces lactis which has less than 40 units of arylsulfatase activity per Neutral Lactase Unit (NLU) of lactase activity to a dairy product comprising lactose. The preparation is obtained by: - The separation of arylsulfatase using chromatography from a preparation which comprises lactase and arylsulfatase; - Cultivating a lactase expressing cell in growth medium to which sulphate has been added to repress arylsulfatase activity; - Using a lactase expressing cell in which the gene for arylsulfatase is eliminated or disrupted; or - Using a lactase expressing strain that is a natural low producer or non-producer of arylsulfatase activity. |
