abstract | FIELD: food industry. n SUBSTANCE: invention relates to a chilled food product containing a temperature-dependent gelated coating with a milk product inside and the product manufacture method. The chilled food product contains an outer temperature-dependent gelated coating (that exists only at a temperature below 20°C and is free of gelating substances active in relation to multivalent ions) and a filling containing a milk product completely enclosed by the gelated coating. The food product manufacture method involves the following stages. The component forming the gelated outer coating (at a temperature higher than the temperature of its gelation) and the component forming the filling are simultaneously batched and simultaneously introduced into an intermediate mould or the final package.
