abstract FIELD: technological processes.SUBSTANCE: present invention relates to production of fatty acid monoglycerides. Method of producing monoglycerides of fatty acids, comprising simultaneous loading into a reactor equipped with a stirring device, a thermometer and a gas tap, refined animal fats or hydrogenated fats of vegetable oils, glycerine and an alkaline catalyst, wherein glycerolysis is carried out by mixing and heating at temperature of 200–240 °C for 4 hours, cooling reaction mixture to 160 °C, neutralization with orthophosphoric acid and subsequent cooling to 85 °C, characterized in that the reaction mixture is mixed with a polar organic solvent while stirring and heating to temperature of 25–60 °C with subsequent addition of water, cooling the obtained mixture to 5–10 °C and separating the precipitated mixture of di- and triglycerides, where the solution is filtered out, solvents are distilled off, and residue containing 75–95 % monoglycerides is cooled and dried.EFFECT: technical result consists in simplification of method, reduction of power consumption and increase of output of produced product.9 cl, 6 ex
