abstract FIELD: coffee industry. n SUBSTANCE: coffee composition contains coffee bean particles in the amount of 1-50 wt.% of dry solids and soluble coffee solids in the amount of 50-99 wt.% of dry solids. Coffee bean particles have a particle size D 90 of 50 mcm or less and the oil content of 8 wt.% or less. A method for producing coffee bean particles is carried out in the following way. Oil is removed from coffee beans to obtain fat-free coffee beans, where the oil content is 6 wt.% or less. Coffee beans are ground to a particle size D 90 of 50 mcm or less.
