A method for preparing a highly dispersible whole grain powder by hydrolyzing, grinding and cohesing grain flour. The highly dispersible hydrolyzed whole grain flour made in accordance with the present invention comprises an enzyme which hydrolyzes the whole grain flour while maintaining the integrity of the whole grain in the process. The whole grain flour of the present invention is highly dispersible in both liquid and semi-solid media. |
