| abstract |
The present invention provides a method for inhibiting the deterioration of the physical properties other than the aging property of the starch, that is, the method of inhibiting the deterioration of the starch quality without significantly changing the structure of the starch, by providing a starchy substance to inhibit aging. According to the method of the present invention, the method for inhibiting aging of the starch is characterized in that the trehalose-forming enzyme is introduced into the reducing end of the starch, and the trehalose structure is introduced into the reducing end of the starch. The aging property of the aforementioned starch is lower than that before the introduction of the trehalose structure. |
