abstract This invention provides a process for clarifying and concentrating Xanthomonas heteropolysaccharide fermentation broth, which process includes filtration and ultrafiltration steps. A clarified and concentrated xanthan gum solution of the present invention contains between about 8-15 weight percent xanthan gum, and exhibits a viscosity in the range of 15,000-30,000 centipoises, and a light transmittance of greater than 5 percent as measured by a colorimeter.
