Methods for the production of omega-3 and/or omega-6 enriched glycerophospholipids are provided, which are based on enzymatic transesterification and esterification through phospholipases PLA1 and PLA2, chemical synthesis, and enzymatic synthesis through phospholipase D. Phosphatidylserine, phosphatidylcholine, phosphatidylinositol and phosphatidylethanolamine preparations are also provided, as well as food articles, pharmaceutical compositions and capsules comprising thereof. |
