abstract |
It is intended to provide a method of processing fresh coffee beans whereby a novel flavor can be imparted to a coffee drink by a convenient procedure without causing an increase in the material cost. A method of processing fresh coffee beans which involves the fermentation step of bringing a component to be fermented contained in coffee fruits into contact with a microorganism and conducting the fermentation process and the recovery step of separating and recovering fresh coffee beans from the coffee beans having been subjected to the fermentation step as described above, wherein at least a part of the coffee bean sarcocarp is exposed and contacted with the microorganism in the fermentation step as described above. |
