Disclosed is a method for producing an L-amino acid by allowing L-succinylase to act on a mixture of N-succinyl amino acid enantiomers in the coexistence of N-acylamino acid racemase to specifically hydrolyze the L-form. In particular, disclosed is a method for producing an L-amino acid in high yield by using an N-succinyl amino acid with a particularly low dissolved concentration as a raw material and allowing a reaction to proceed while depositing the resulting L-amino acid outside the reaction system. According to the method, an L-amino acid with high optical purity, particularly an L-amino acid useful as a raw material for a drug product, an agricultural chemical, or the like can be efficiently produced. |
