abstract |
A process for preparing a nano-particulate or micro-particulate protein-based product that employs kinetic trapping of protein is described. The method comprises the steps of mixing together at low shear a polysaccharide solution, a protein solution that is incompatible with the polysaccharide solution, and an alkaline earth metal salt solution, heating the mixture under mild heat conditions to induce phase separation and the formation of a suspension of alkaline earth metal cation-stabilised protein microparticles or nanoparticles, and rapidly cooling the mixture. The alkaline earth metal cation stabilised protein microparticles or nanoparticles are separated from the phase separated mixture. A specific example is whey protein and konjac gum. The particulate protein may be used as fat replacer in food products. |
