abstract Method for producing and/or processing coloured pearl sugar and/or pearl sugar with one or more flavour additives, whereby the method contains the following steps : - providing pearl sugar; providing water that is saturated with sugar, hereinafter referred to as sugar water; - providing one or more additives in the sugar water; mixing the sugar water with the pearl sugar, after providing one or more additives to the sugar water or not, to thus obtain half- finished pearl sugar; after mixing the pearl sugar with the sugar water and with the one or more additives, drying the half- finished pearl sugar, whereby drying can be realised by heating the half- finished pearl sugar and/ or bringing it in contact with a dry air flow and/or by spreading the half- finished pearl sugar on a warm surface; to obtain enriched pearl sugar after drying the half- finished pearl sugar.
