An object of the present invention is to provide a swallowing food suitable for those with reduced mastication and swallowing functions, such as those with mastication and dysphagia and elderly people. It is an object of the present invention to provide a food for people with dysphagia that is excellent, 2) has little adhesion to the throat, and is functionally 1) tasteless and odorless, 2) transparent, and 3) excellent in water retention. SOLUTION: By blending deacyl gellan gum and / or agar with psyllium seed gum, foods are given optimal properties for chewing and swallowing.
