abstract The invention relates to a method and to a device for roasting food products in a treatment assembly. In a treatment assembly (2) comprising a roasting chamber (3) and at least one heating unit, an indicator variable is determined that allows the drawing of conclusions as to the moisture of the food products on the basis of a measurement using a touch-free sensor (5), in particular a NIR sensor, in particular the moisture. A preferably controlled roasting phase is started as soon as the indicator variable of a specified target indicator value, in particular a target moisture value, has been reached. Process parameters can be controlled and/or regulated prior to the start of the preferably controlled roasting phase and/or after the completed roasting process subject to the determined indicator variable.
