A lightwave oven (10) cooking method and apparatus using pulsed power to a plurality of high power lamps (18a-18e, 16a-16e) provides visible and near-visible wavelength radiant energy wherein power is applied to the lamps (18a-18e, 16a-16e) for a time period without vaporizing all suface water on the food, then reducing irradiation to complete the cooking cycle avoiding significant surface browning which inhibits deep penetration in the food in the near-visible and visible ranges. Reduction in power is achieved by reducing the duty cycle in steps or continuously. |
